Stracciata (“Stretchy”) is a stretched curd cheese and a typical mozzarella of Alto Molise. Stracciata is a typical Cheese of Alto Molise (Prodotto Agroalimentare Tradizionale della Regione Molise: PAT, DLlgs. 173/1996).
Features: stracciata is a strand of mozzarella made with raw cow’s milk. It is usually 4-5 cm wide, 1 cm thick and 20 cm long. The paste is homogeneous and white. It has an extremely soft texture and a delicate, clean, milky taste.
Serving suggestions: remove Stracciata from the paper, put it in a dish and keep it refrigerated. Serve at room temperature. If correctly preserved, Stracciata becomes spreadable in three or four days.
